So bruiser is more for + health and heavy more for + all ress.
But i wonder whats better and when to use what?

It's really up to you and how much of what damage type you are taking. I personally use a mix to keep everything as high as possible (even a sorc piece ATM because it has a crap ton of elemental resist)
