Besides ailments and runes that add a deliberate dot, what counts as dot in the calculations. does solar fall? does parasite? I'm doing a typical ailment mage, so what skills should I be using to not get the damage debuff on them from cabalist nodes.

aliments only, you got 4 that deal dmg normally you will focus on material or elemental to boost the corresponding dots mainly and the other 2 are just side steps. If you Build it up right you can get like 400k-800k dots if all 4 are at max stacked before Immortal Offering,
Its a kiting playstyle thou if you only go for Dots.
Most "aliment"-Mages dont rly use aliments for the Dot-Dmg but focus on just getting as many diffrent aliments on a enemy as possible to boost their dmg.

what about runes that add damage over time effects. they won't get the ailment buff, but do they get the debuff to non dots?
