Does starting as Range/Melee/Magic mean anything
just gives you your first few skills, but since you can take any weapon, any skill any route does it matter?

It's pretty much arbitrary, it's mainly there to give you a starter skill/weapon based on whatever type of character you want to build. You can choose Ranged and still build a caster or a melee character, it doesn't matter.
