Regarding summons build, since summons currently don't scale with your gear, you can simply aim for the Plaguebringer nodes in the gate of fate (Purple nodes in the outter ring).

Other than that, I'm pretty sure your fiance's daughter can have fun by simply playing all/some of the summons spells along with maybe a damaging spell for support. :)
